Ingredients
5 oz assorted salad greens
2 oranges, peeled and sectioned
1 apple, thinly sliced
1/4 cup pomegranate arils
1/4 cup sweetened dried cranberries
1/3 cup crumbled feta cheese
1/4 cup toasted chopped pecans
For the vinaigrette:
3 tbsp fresh orange juice
1 tbsp champagne vinegar
1 tbsp Dijon mustard
1 tbsp honey
1 tbsp finely minced shallot
1 1/2 tbsp olive oil
Salt and black pepper to taste
Instructions
1. Combine all vinaigrette ingredients in a jar or bowl and shake or whisk until smooth. Set aside.
2. Spread salad greens in a large serving bowl or platter.
3. Evenly top with orange segments, apple slices, pomegranate arils, cranberries, feta, and pecans.
4. Serve immediately with the vinaigrette on the side or drizzle lightly over the top.
