Ingredients
2 large sweet potatoes
2 tablespoons almond butter
2 tablespoons fresh orange juice
1/2 teaspoon ground cinnamon
Instructions
1. Preheat oven to 400°F. Place whole or cubed sweet potatoes on a baking sheet and roast for about 1 hour until very tender.
2. Allow sweet potatoes to cool slightly. Remove skins if desired, then mash until smooth in a bowl.
3. Stir in fresh orange juice and ground cinnamon while the sweet potatoes are still warm.
4. Add almond butter and mix thoroughly until fully incorporated and creamy.
5. Taste and adjust cinnamon or orange juice if needed. Serve warm.
