1 lb uncooked turkey sausage

5 cups sweet potatoes, cubed (1-inch pieces)

1 green bell pepper, diced

1/2 large yellow onion, finely diced

2 tbsp avocado oil (or olive oil)

10 large eggs

1/2 cup whole milk

1/2 cup grated mozzarella cheese

1 tsp salt

1 tsp dried thyme

1/2 tsp pepper


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.

2. Sauté diced onion, bell pepper, and sweet potatoes in oil for 8–9 minutes until they begin to soften. Add garlic during the last minute.

3. Spread cooked vegetables evenly in the baking dish.

4. In the same pan, cook turkey sausage until browned and fully cooked, breaking it into small pieces. Add to the baking dish and mix with the vegetables.

5. In a bowl, whisk eggs, milk, cheese, salt, thyme, and pepper until smooth.

6. Pour egg mixture over the sausage and vegetables, stir gently to combine.

7. Bake for 40–45 minutes until the center is set. Cover with foil if browning too quickly.

8. Let cool for 15 minutes before serving.

Cut sweet potatoes into uniform 1/2–1 inch cubes to ensure even cooking.
