Ingredients
4 slices bacon
2 tbsp canola oil
4 cups potatoes, cut into 1-inch cubes
2 1/2 tbsp taco seasoning mix
8 soft corn tortillas (6 inch)
8 eggs, well beaten
1/2 cup shredded Monterey Jack cheese (2 oz)
Instructions
1. Bake bacon at 375°F for 10 minutes until crispy, then chop.
2. Cook cubed potatoes in oil over medium heat, seasoning with taco mix, stirring every 5 minutes until soft (15–20 minutes).
3. Arrange tortillas upright in a 13×9-inch baking dish.
4. Scramble eggs in a skillet over medium heat, removing from heat while still slightly soft.
5. Fill each tortilla with about 1/4 cup potatoes, scrambled eggs, chopped bacon, and 1 tbsp cheese.
6. Bake assembled tacos at 375°F for 10 minutes until heated through and cheese is melted.
7. Serve immediately.
Notes
Warm tortillas before filling to avoid toughness.
Do not overcook eggs—they will finish cooking in the oven.
Cut potatoes into even cubes for consistent texture.
Bake bacon from a cold oven for crispier results.
