Description

Soft, chewy, and sweet, these Tasty Chocolate Chip Red Velvet Whoopie Pies are perfect for Valentine’s Day. With a simple cake mix base and creamy chocolate chip filling, they’re as easy as they are delicious.


Ingredients

3 large eggs (room temperature)

1/2 cup canola oil

1 box red velvet cake mix

2 tsp vanilla extract

1/2 cup butter (softened)

8 oz cream cheese (softened)

2 cups powdered sugar (sifted)

1 cup mini semisweet chocolate chips


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large bowl, mix cake mix, eggs, oil, and vanilla until smooth.

3. Transfer batter into a piping bag with a 1/2-inch tip. Pipe heart-shaped cookies onto parchment-lined baking sheets, about 1-1/2 by 1 inches in size and spaced 1 inch apart.

4. Bake for 6–8 minutes until edges are set. Let cool 2 minutes on the pan, then move to wire racks.

5. For the filling, beat cream cheese and butter until smooth. Gradually add powdered sugar and beat until creamy. Stir in chocolate chips.

6. Once cookies are cool, spread filling on the flat side of half the cookies. Top with remaining cookies.

7. Store in the refrigerator to keep fresh.
