Description

Soft, rich, and festive, these tasty heart-shaped red velvet whoopie pies make the perfect Valentine’s Day treat. With fluffy cocoa cookies and creamy filling, they’re sweet, simple, and full of love.

Ingredients

Scale

1/2 cup buttermilk

1/2 cup unsalted butter, softened

1/3 cup brown sugar

1/2 cup white sugar

1 egg

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

3 tbsp cocoa powder (natural or Dutch-process)

1 1/2 cups all-purpose flour

Red food coloring (gel preferred)

For the frosting:

4 oz cream cheese, softened

3 tbsp unsalted butter, softened

2 to 3 cups powdered sugar, sifted

1/2 tsp vanilla extract

Instructions

1. Create a heart-shaped stencil on parchment paper and flip the paper so pencil marks face down.

2. Mix flour, baking powder, baking soda, salt, and cocoa powder in one bowl.

3. In another bowl, beat butter with both sugars until fluffy.

4. Add egg and vanilla and mix until smooth.

5. Gradually fold in the dry ingredients, alternating with buttermilk, mixing gently until smooth.

6. Add red food coloring to reach the desired color.

7. Pipe batter onto parchment using the heart outlines.

8. Bake at 350°F (180°C) for 10 minutes.

9. Cool completely.

10. For the frosting, beat cream cheese and butter until smooth, then add powdered sugar and vanilla, whipping until fluffy.

11. Pipe frosting onto one cookie half, top with the other, and press lightly to sandwich.

Notes

Avoid overmixing to keep cookies soft and cake-like.

Start with a small amount of food coloring to prevent runny batter.

Ensure cream cheese and butter are at room temperature for a smooth frosting.

Cool cookies completely before frosting to prevent melting.
