Description
This quick and flavorful meatloaf uses Stove Top Stuffing for incredible texture and taste. With only 5 minutes of prep, it’s the ultimate weeknight comfort meal that’s moist, hearty, and perfectly balanced.
Ingredients
1 pound ground beef
1 box Stove Top Stuffing (any flavor)
2 large eggs
1/2 cup ketchup
1/2 cup water
Optional: diced onion, minced garlic, shredded cheese, fresh herbs, BBQ or chili sauce for topping
Instructions
1. Preheat oven to 350°F.
2. In a large bowl, mix ground beef, dry stuffing mix, eggs, water, and half the ketchup until combined.
3. Do not overmix; stop once ingredients look evenly blended.
4. Transfer mixture to a greased loaf pan or shape by hand on a foil-lined baking sheet.
5. Spread remaining ketchup, BBQ sauce, or chili sauce evenly on top.
6. Bake for 45–50 minutes or until internal temperature reaches 160°F.
7. Let the meatloaf rest for 5 minutes before slicing and serving.
Notes
Use ground beef with a bit of fat for extra juiciness; lean meat can dry out.
If using lean beef, add 2 tablespoons milk or an extra egg for moisture.
Stuffing mix replaces breadcrumbs and seasonings for perfect flavor balance.
Store leftovers wrapped in foil and freeze for up to 3 months.
Reheat slices in the oven at 250°F with a little broth for 20–25 minutes.
