Description

1 cup all-purpose flour

12 Cool Mint Oreo cookies, roughly crushed (for batter)

½ cup butter or margarine, softened (for frosting)

3 to 4 cups powdered sugar

1 teaspoon vanilla extract (for frosting)

Small amount of milk as needed

¾ cup white chocolate chips, melted

18 Cool Mint Oreo cookies, roughly crushed (for topping)


Instructions

1. Preheat oven to 350°F and line a 9×13-inch pan with foil, then lightly grease it.

2. Stir together marshmallow fluff, mint extract, and green food coloring until evenly tinted; set aside.

3. Melt the baking chocolate and butter together until smooth. Mix in the sugar until fully combined.

4. Add eggs, vanilla, and coffee if using, stirring well. Gently mix in the flour just until incorporated, then fold in 12 crushed Oreos.

5. Spread the brownie batter evenly in the prepared pan. Spoon about ½ cup of the mint mixture over the batter and lightly swirl it through the top.

6. Bake for about 23 to 25 minutes, until the center is set but still fudgy. Allow brownies to cool completely.

7. Beat together softened butter, powdered sugar, vanilla, and a small splash of milk until smooth and fluffy.

8. Blend the melted white chocolate with the remaining mint mixture and prepared frosting; add more green coloring if desired.

9. Spread the green topping evenly over the cooled brownies and sprinkle with 18 crushed Oreos, gently pressing them into the surface.

10. Let the topping fully firm up before slicing and serving.
