Description
This Ultimate Chicken Salad is creamy, crunchy, and fresh with tender chicken, juicy grapes, and toasted almonds. It is quick to make and perfect for lunch or meal prep.
Ingredients
3 cups cooked chicken breast, diced or shredded
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 cup seedless grapes, halved
2 celery stalks, diced
3 green onions, sliced
1/3 cup sliced almonds, toasted
2 tablespoons fresh parsley, chopped
1 tablespoon fresh tarragon, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Gently simmer chicken in salted water until tender, then cool and cut into small pieces
2. Toast sliced almonds in a pan over medium heat until lightly golden, then let cool
3. Chop grapes, celery, green onions, parsley, and tarragon into small pieces
4. In a large bowl, combine chicken, mayonnaise, and Dijon mustard
5. Add all prepared ingredients and mix until creamy and evenly coated
6. Season with salt and black pepper, then chill briefly before serving
