Description
These Valentine Cake Cookies Easy are soft, chewy, and full of strawberry flavor. Made from cake mix, they’re the perfect last-minute Valentine’s Day treat that looks beautiful and tastes even better.
Ingredients
1 box strawberry cake mix 2 large eggs 80 ml vegetable oil 180 g white chocolate chips Red sprinkles (optional)
Instructions
Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper. In a large bowl, mix the cake mix, eggs, and oil until a thick dough forms. Fold in the white chocolate chips until evenly distributed. Roll about 1.5 tablespoons of dough into balls and place them on the prepared baking sheet, leaving space between each. Add red sprinkles if desired. Bake for 9–12 minutes, or until the edges are slightly golden and centers appear soft. Let cookies sit on the baking sheet for 2 minutes, then move them to a wire rack to cool completely.
Notes
Use a neutral oil like canola or sunflower if preferred. Let cookies cool fully before storing to maintain texture. You can freeze them after baking by layering with parchment in a hard container; thaw at room temperature. The texture is soft and chewy with crisp edges. Swap cake mix flavors (chocolate, lemon, vanilla, red velvet) and chip types (dark, milk, etc.) to customize. Butter or coconut oil can replace vegetable oil. Add-ins like nuts or festive candies work well for variation.
