Description
Fresh and light Vietnamese Summer Rolls filled with tender chicken, crisp vegetables, soft vermicelli noodles, and herbs, all wrapped in delicate rice paper and served with a creamy peanut dipping sauce.
Ingredients
Rice paper wrappers
Thin vermicelli rice noodles
Cooked chicken (lemongrass, rotisserie, or roast)
Julienned carrots
Julienned cucumbers
Cabbage, lettuce, or avocado (optional)
Fresh basil or cilantro
Hoisin sauce
Peanut butter
Water
Fresh lime juice
Honey or sugar
Chopped roasted peanuts
Instructions
1. Cook vermicelli noodles in boiling water until tender, then drain and let dry
2. Prepare and slice all vegetables and shred the cooked chicken
3. Dip each rice paper wrapper briefly in warm water until just softened
4. Place wrapper on a clean surface and layer vegetables, noodles, herbs, and chicken
5. Fold the bottom over the filling, tuck in the sides, and roll tightly
6. Repeat with remaining ingredients
7. Mix hoisin sauce, peanut butter, water, lime juice, and sweetener until smooth
8. Top sauce with chopped peanuts and serve with fresh rolls
Notes
Keep fillings dry to prevent tearing
Do not soak wrappers too long
Work quickly once wrappers soften
Avoid overfilling rolls
Best eaten fresh after assembling
Extra peanut sauce can be used as a dip or noodle sauce
