White chocolate chips Strawberry Cookies are soft, chewy, and bright pink cookies made with strawberry cake mix and creamy white chocolate chips. They come together quickly and deliver sweet strawberry flavor balanced with smooth white chocolate in every bite.
Ingredients
15.25 oz strawberry cake mix (1 box)
1 teaspoon baking powder
2 large eggs
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup white chocolate chips
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. Stir together the strawberry cake mix and baking powder in a large bowl.
3. In a separate bowl, whisk the eggs, vegetable oil, and vanilla until combined.
4. Add the wet mixture to the dry ingredients and mix until a soft dough forms.
5. Fold in the white chocolate chips.
6. Scoop rounded portions of dough onto the prepared baking sheets, leaving space between each cookie.
7. Bake for 9 to 10 minutes, just until the tops are set and no longer glossy. Do not allow them to brown.
8. Let the cookies rest on the baking sheet for about 10 minutes before transferring so they can firm up properly.
Notes
Remove the cookies from the oven when they look slightly underbaked to keep them soft and chewy.
Press additional white chocolate chips onto the tops while the cookies are still warm for better presentation.
Sprinkles or powdered sugar can be added for decoration if desired.
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
Freeze in a sealed container with parchment between layers for up to 1 month. Thaw before serving.
