Ingredients

- 4 cups shredded zucchini (fresh or frozen)
- 2 large eggs
- 2½ cups mozzarella cheese, shredded
- ¼ cup Parmesan cheese
- 1 tsp Italian seasoning
- 2 cloves minced garlic
- 4 cups pizza or spaghetti sauce
- ½ lb ground beef or Italian sausage (optional)
- Pepperoni slices
- Optional toppings: green peppers, mushrooms, onions, olives
Instructions
- Salt fresh zucchini or thaw frozen; squeeze dry thoroughly.
- Mix zucchini with eggs, 1½ cups mozzarella, Parmesan, garlic, and seasoning. Spread into baking dish.
- Bake crust at 400°F for 20 minutes.
- Spread sauce, meat, and toppings over crust.
- Top with remaining cheese and bake 20 more minutes.
- Broil 2–3 minutes for golden top. Rest 3 minutes before slicing.
Notes
Drain zucchini well to avoid soggy texture. Can prep ahead or freeze. Customize with your favorite toppings or make vegetarian.
