Description

A golden, cheesy crust made of shredded zucchini, topped with gooey mozzarella, zesty sauce, and your favorite pizza toppings. Perfect for garden zucchini overload.


Ingredients

  • 4 cups shredded zucchini (fresh or frozen)
  • 2 large eggs
  • 2½ cups mozzarella cheese, shredded
  • ¼ cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cloves minced garlic
  • 4 cups pizza or spaghetti sauce
  • ½ lb ground beef or Italian sausage (optional)
  • Pepperoni slices
  • Optional toppings: green peppers, mushrooms, onions, olives

Instructions

  1. Salt fresh zucchini or thaw frozen; squeeze dry thoroughly.
  2. Mix zucchini with eggs, 1½ cups mozzarella, Parmesan, garlic, and seasoning. Spread into baking dish.
  3. Bake crust at 400°F for 20 minutes.
  4. Spread sauce, meat, and toppings over crust.
  5. Top with remaining cheese and bake 20 more minutes.
  6. Broil 2–3 minutes for golden top. Rest 3 minutes before slicing.

Notes

Drain zucchini well to avoid soggy texture. Can prep ahead or freeze. Customize with your favorite toppings or make vegetarian.
