Description

This 20-Minute Spinach Blueberry Salad combines tender baby spinach, juicy blueberries, creamy avocado, crunchy walnuts, tangy goat cheese, and fresh mint. A simple balsamic vinaigrette brings every bright flavor together for an easy lunch, side salad, or light main course.


Ingredients

Salad:

4 cups baby spinach

2 cups fresh blueberries

1 cup raw walnuts

1 medium to large avocado, cut into chunks

1/2 cup crumbled goat cheese

1/4 cup fresh mint, torn

Salt, to taste

Black pepper, to taste

Balsamic vinaigrette:

1/4 cup olive oil

2 tablespoons balsamic vinegar

Juice of 1/2 lemon

1 teaspoon garlic powder or 2 minced garlic cloves

1 teaspoon honey

Salt, to taste

Black pepper, to taste


Instructions

1. Add the olive oil, balsamic vinegar, lemon juice, garlic powder or minced garlic, honey, salt, and black pepper to a small bowl or jar.

2. Whisk or shake the dressing ingredients until smooth and well blended.

3. Place the baby spinach, blueberries, walnuts, avocado, goat cheese, and torn mint in a large serving bowl or on a platter.

4. Pour the balsamic vinaigrette over the salad.

5. Gently toss until the ingredients have an even coating of dressing.

6. Serve immediately.

Notes

Baby spinach can be replaced with arugula, baby kale, or spring mix.

Walnuts may be replaced with pecans or almonds.

Goat cheese can be replaced with feta cheese.

For a vegan version, use dairy-free cheese and replace the honey with maple syrup.

Add cooked quinoa, farro, or couscous for a heartier salad.

The salad pairs well with salmon, other fish, chicken, tofu, shrimp, scallops, hard-boiled eggs, roasted potatoes, quinoa, or farro.
