Description

Festive 4th of July Cake Pops made with soft vanilla cake, cream cheese filling, and sweet white chocolate coating. Perfect for patriotic parties, BBQs, and summer gatherings.

Ingredients

Scale

1 box white cake mix plus the oil, water, and eggs required on the box

Red food coloring

Blue food coloring

8 ounce block cream cheese, softened

10 ounce package white vanilla melting wafers

Red, white, and blue sprinkles

Instructions

1. Preheat the oven according to the cake mix package directions and grease 3 small baking pans.

2. Prepare the cake batter following the package instructions.

3. Divide the batter evenly into 3 bowls. Tint one red, one blue, and leave one plain white.

4. Pour each color into separate pans and bake for 14 to 16 minutes, until a toothpick inserted in the center comes out clean.

5. Cool the cakes completely, then crumble each color into separate bowls.

6. Beat the softened cream cheese until smooth, then divide it evenly between the cake crumbs and mix until fully combined.

7. Take small portions of each cake color and press them together into 1 inch balls. Place on parchment lined baking sheets and refrigerate for 1 to 2 hours.

8. Melt the white vanilla wafers in the microwave in 30 second intervals, stirring between each round until smooth.

9. Dip each chilled cake ball into the melted coating, letting excess drip off.

10. Transfer remaining melted coating into a zip top bag, snip the corner, and drizzle over the cake balls.

11. Add sprinkles immediately, then refrigerate for about 15 minutes until set.

12. Serve chilled.

Notes

Full fat cream cheese gives the richest flavor and smoothest texture.

If using white chocolate chips instead of melting wafers, add a small amount of vegetable or coconut oil to help create a smoother coating.

Use a cookie scoop for evenly sized cake balls.

A fork works best for dipping the cake balls into melted coating.

Use a toothpick to slide coated cake balls off the fork cleanly.

A piping bag or zip top bag makes drizzling easier and neater.

Candy melt colors and sprinkles can be changed for different holidays or themes.

Can be served with lollipop sticks to turn them into traditional cake pops.

Store refrigerated in an airtight container for up to 5 days.

Freeze before decorating for up to 1 month. Thaw in the refrigerator before adding sprinkles and serving.
