Description
Soft, thick 4th of July Cookies made with vanilla cake mix, cream cheese, Oreo chunks, patriotic M&M’s, and red, white, and blue sprinkles. These easy cookies have a fluffy cookies and cream texture and make a fun dessert for Independence Day parties, BBQs, potlucks, and summer dessert tables.
Ingredients
1 (15.25 ounce) vanilla cake mix
8 tablespoons unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
4 ounces cream cheese, softened
2 cups Oreo cookie chunks, about 14 cookies
3/4 cup red, white, and blue M&M’s, divided
1/2 cup red, white, and blue sprinkles, divided
Instructions
1. Combine the dry cake mix, softened butter, cream cheese, egg, and vanilla in a large bowl until a soft dough forms.
2. Fold in the Oreo cookie chunks, part of the M&M’s, and part of the sprinkles. Mix gently so the cookie chunks stay intact.
3. Chill the dough for about 1 hour so it firms up.
4. Heat the oven to 350°F and line a baking sheet with parchment paper.
5. Scoop the dough into evenly sized balls, using about 2 tablespoons of dough for each cookie.
6. Place the dough balls on the prepared baking sheet with space between each one.
7. Press the remaining M&M’s and extra sprinkles on top of each dough ball for decoration.
8. Bake for about 10 minutes, or until the cookies look set around the edges and soft in the center.
9. Let the cookies rest on the hot baking tray briefly.
10. Transfer the cookies to a cooling rack and let them cool completely before storing.
Notes
Avoid overmixing after adding the Oreo chunks so they do not break down into the dough.
Use a consistent scoop size for even baking.
For a more festive look, roll or top the dough balls with extra sprinkles and candies before baking.
Chilling the dough helps the cookies bake up thick and soft.
Store the cookies in an airtight container once fully set.
