Description

Fun and festive 4th Of July Ice Cream Cone Cupcakes made with red velvet cake mix, crunchy cones, swirled red, white, and blue frosting, and patriotic sprinkles. Perfect for summer parties, kids, and holiday dessert tables.

Ingredients

Scale

15.25 oz red velvet cake mix, 1 box

3 eggs

1/2 cup oil

1/4 cup water

12 ice cream cones

32 oz white icing

Red food coloring

Blue food coloring

Patriotic sprinkles

Instructions

1. Combine the cake mix with eggs, oil, and water in a large bowl and mix thoroughly until smooth.

2. Fill each ice cream cone about three-quarters full with batter and place them upright in a muffin tin.

3. Bake at 350°F for about 15 minutes, or until a toothpick inserted in the center comes out clean.

4. Allow the cupcakes to cool completely before decorating.

5. Spread parchment paper or plastic wrap on a flat surface.

6. Divide the frosting into three portions, coloring one red and one blue while leaving one white.

7. Pipe or spread the three colors side by side in lines.

8. Roll them together inside the parchment or plastic wrap.

9. Transfer the rolled frosting into a piping bag fitted with a star tip.

10. Pipe the frosting in a swirl over each cooled cone cupcake.

11. Finish with patriotic sprinkles before serving.

Notes

Fill cones only about three-quarters full to prevent overflow during baking.

Let cupcakes cool completely before adding frosting so it holds its shape.

Creating the tri-color frosting inside the piping bag produces a pretty swirled effect when decorating.

Best served immediately after decorating.

Store in the refrigerator for up to 2 days, preferably kept upright in a muffin pan.

Cones generally stay crisp, but poking a small hole in the bottom can help release steam and prevent sogginess.

These can be made a day ahead, though cones may soften slightly.

Variations include using different cake flavors, frostings, chocolate chips, nuts, crushed cookies, or candies.
