Description
Soft chocolate chip cookie sandwiches filled with vanilla ice cream and rolled in red, white, and blue sprinkles for a fun frozen Fourth of July dessert.
Ingredients
3/4 cup softened butter
1 cup brown sugar
1/2 cup granulated sugar
1 egg
1/2 tablespoon vanilla extract
2 1/2 cups flour
2 teaspoons cornstarch
1 teaspoon baking soda
1 cup chocolate chips
1 cup red, white, and blue M&M’s
Vanilla ice cream

Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Beat butter, brown sugar, and granulated sugar until creamy. Mix in egg and vanilla.
3. In another bowl, combine flour, cornstarch, and baking soda. Slowly mix dry ingredients into wet ingredients until a dough forms.
4. Stir in chocolate chips.
5. Scoop dough into 2 tablespoon portions and place on the baking sheet with space between each cookie.
6. Bake for 10 to 12 minutes until lightly golden.
7. Immediately press M&M’s and extra chocolate chips into the tops while warm.
8. Allow cookies to cool fully.
9. Place vanilla ice cream between two cookies to form sandwiches, then roll the edges in patriotic sprinkles.
10. Freeze until firm, then serve cold directly from the freezer.
Notes
Cookies should cool completely before adding ice cream to prevent melting.
Best stored in the freezer until ready to serve.
Can be prepared in batches ahead of time.
Extra chocolate chips and M&M’s can be added after baking for decoration and texture.
