Ingredients
3/4 cup unsalted butter, softened
1 cup packed light brown sugar
1/4 cup granulated sugar
1/2 cup creamy peanut butter
1 large egg
1 egg yolk
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup quick oats
1 teaspoon baking soda
1/2 teaspoon salt
3/4 to 1 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1 cup M&M candies
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper
2. Beat butter, brown sugar, granulated sugar, and peanut butter until light and fluffy
3. Mix in egg, egg yolk, and vanilla extract until smooth
4. In a separate bowl, combine flour, oats, baking soda, and salt
5. Gradually mix dry ingredients into wet mixture just until combined
6. Fold in chocolate chips and M&M candies
7. Scoop dough onto baking sheets spaced apart
8. Bake for 9 to 11 minutes until edges are lightly golden and centers remain soft
9. Tap baking sheet gently during and after baking to flatten cookies slightly
10. Allow cookies to set on pan before removing
Notes
Use room temperature ingredients for easier mixing and better texture
