Description

This easy 4th of July Pie has a buttery cookie crust, creamy no-bake cheesecake filling, and fresh strawberry and blueberry decoration. It is chilled, festive, and perfect for summer parties.


Ingredients

200 g biscuit crumbs such as graham crackers, digestive biscuits, or Biscoff cookies

90 g unsalted butter, melted

Pinch of salt

340 g full-fat cream cheese, cold

170 g very cold heavy cream

100 g powdered sugar, sifted

Fresh strawberries and blueberries for decoration


Instructions

1. Melt the butter and let it cool slightly. Crush the biscuits into very fine crumbs using a food processor or rolling pin. Mix the crumbs with melted butter and salt until evenly combined.

2. Press the mixture firmly into the sides and bottom of an 8-inch loose-bottom pie tin. Freeze for 15 minutes to firm up.

3. Whip the cold cream cheese, heavy cream, and sifted powdered sugar together for 2 to 3 minutes until smooth, fluffy, and airy.

4. Spread the filling into the chilled crust and smooth the surface. Refrigerate for 30 minutes before decorating.

5. Arrange strawberries and blueberries on top in a flag-style pattern with berry stripes and a blueberry square section.

6. Chill the pie for at least 4 hours before serving. Keep refrigerated and serve cold.

Freeze the crust before filling so it keeps its shape.

The filling sets naturally in the refrigerator without gelatin or thickeners.
