Description

This 4th Of July Poke Cake Recipe is a chilled patriotic dessert made with white cake, red and blue Jello, and fluffy cream cheese whipped frosting.


Ingredients

1 box (16.25 oz) white cake mix, plus ingredients listed on the box, usually eggs, oil, and water

1 box (3.4 oz) strawberry Jello

1 box (3.4 oz) berry blue Jello

2 cups boiling water, divided

1 cup cold water, divided

8 oz cream cheese

2 cups powdered sugar

1 1/2 cups heavy whipping cream

1 teaspoon vanilla extract

Red, white, and blue sprinkles


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.

2. Prepare and bake the white cake according to package directions.

3. Let the cake cool completely.

4. Poke holes evenly across the cake using the handle of a wooden spoon or a thick straw.

5. Dissolve the strawberry gelatin in 1 cup boiling water, then stir in 1/2 cup cold water.

6. In a separate bowl, dissolve the berry blue gelatin in 1 cup boiling water, then stir in the remaining 1/2 cup cold water.

7. Carefully fill alternating holes with the red and blue gelatin mixtures without blending the colors together.

8. Cover and refrigerate for at least 4 to 6 hours, preferably overnight.

9. For the topping, beat cream cheese until smooth.

10. Gradually mix in powdered sugar, then add vanilla.

11. In another bowl, whip the heavy cream until stiff peaks form.

12. Fold the whipped cream into the cream cheese mixture.

13. Spread frosting over the chilled cake.

14. Finish with patriotic sprinkles before serving.

Notes

Use white cake mix for the brightest red and blue colors.

Do not follow the gelatin box directions. Use the liquid amounts listed in this recipe.

Chilling the cake overnight improves flavor and texture.

Keep the red and blue gelatin separate to prevent purple coloring.

The whipped cream cheese frosting can be replaced with Cool Whip for a lighter topping.

Fresh berries can be used instead of sprinkles for decoration.
