Description

4th of July Red White and Blue Cheesecake Bars are rich, creamy cheesecake bars with a chocolate Oreo crust and festive red, white, and blue swirls. Serve them chilled for summer holidays, picnics, Memorial Day, or Fourth of July celebrations.


Ingredients

30 Oreo cookies with filling

4 tablespoons unsalted butter, melted

24 ounces cream cheese, softened

1 1/2 cups granulated sugar

1/4 cup sour cream

2 teaspoons vanilla extract

1/4 cup all-purpose flour

3 large eggs

Red gel food coloring

Blue gel food coloring

Whipped cream and patriotic sprinkles for serving, optional


Instructions

1. Preheat oven to 325°F and line a 9×13-inch pan with foil.

2. Crush Oreo cookies into fine crumbs, mix with melted butter, then press firmly into the bottom of the pan. Bake for 10 minutes and let cool.

3. Place a large pan of water on the lower oven rack to create steam while baking.

4. Beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, and flour. Add eggs and stir gently just until combined.

5. Divide batter evenly into 3 bowls. Leave one plain, color one red, and one blue using gel food coloring.

6. Drop spoonfuls of each batter color across the crust, alternating colors. Lightly swirl with a knife to create a marbled effect without overmixing.

7. Bake the cheesecake above the water pan for 45–50 minutes until edges are set and center slightly jiggles.

8. Cool at room temperature for 1 hour, then refrigerate 4–6 hours or overnight before slicing.

9. Serve chilled with whipped cream and sprinkles if desired.

Notes

Use room temperature ingredients for a smoother batter and fewer cracks.

Do not overmix after adding eggs to avoid excess air bubbles.

Gel food coloring creates brighter colors without thinning the batter.

The cheesecake should still have a slight jiggle in the center when removed from the oven.

For cleaner slices, dip a knife in hot water and wipe dry between cuts.

Cheesecake bars can be frozen whole or sliced for up to 2 months and thawed overnight in the refrigerator.
