Soft, buttery 4th of July Sugar Cookie Bars with a chewy sugar cookie base, creamy vanilla frosting, and festive red, white, and blue sprinkles or M&M’s.
Ingredients
1/2 cup butter
1/2 cup granulated sugar
2 tbsp brown sugar
1 egg
1/4 tsp almond extract
2 tsp vanilla extract
1 cup flour
1/2 tsp baking powder
3 tbsp cornstarch
1/4 tsp salt
4 tbsp softened butter
1 tsp vanilla extract
3 tbsp heavy whipping cream
1 cup powdered sugar
Red, white, and blue sprinkles and/or M&M’s
Instructions
1. Preheat oven to 350°F and grease an 8×8-inch baking pan.
2. Beat butter, granulated sugar, and brown sugar until creamy.
3. Mix in egg, almond extract, and vanilla.
4. In a separate bowl, combine flour, baking powder, cornstarch, and salt.
5. Stir the dry mixture into the wet mixture until just blended.
6. Spread dough evenly into the prepared pan.
7. Bake for about 15 minutes.
8. Let the bars cool completely, as they continue setting while cooling.
9. For the frosting, beat softened butter, vanilla, heavy cream, and powdered sugar until smooth.
10. Spread frosting over cooled bars.
11. Top with patriotic sprinkles or M&M’s before slicing.
Notes
The bars may appear slightly underbaked when removed from the oven, but they firm up as they cool.
Avoid overmixing the dough to keep the texture soft and tender.
Frost only after the cookie base has fully cooled.
