Description

A festive 4th of July Swirl Pie with a crisp graham cracker crust, airy cream cheese filling, and bright strawberry and blueberry swirls. Serve chilled for a creamy, fruity summer dessert.

160 g graham cracker crumbs

40 g granulated sugar

70 g unsalted butter, melted

450 g cream cheese, softened

90 g powdered sugar

5 ml vanilla extract

240 ml heavy cream, cold

150 g fresh strawberries, chopped

25 g granulated sugar, for strawberries

150 g fresh blueberries

25 g granulated sugar, for blueberries


Instructions

1. Preheat the oven to 175°C. Mix graham cracker crumbs, sugar, and melted butter until the texture resembles damp sand, then press firmly into a pie dish, covering the base and sides. Bake until lightly golden, then let it cool fully.

2. Cook strawberries with sugar over medium heat until softened and juicy, then blend into a smooth puree and let it cool. Repeat the same process with blueberries.

3. Beat the cream cheese with powdered sugar and vanilla until smooth. In a separate bowl, whip the cold cream until stiff peaks form, then gently fold it into the cream cheese mixture to keep it light.

4. Spread part of the filling into the crust, add small spoonfuls of both fruit purees, then layer the remaining filling and more puree on top. Use a knife or skewer to create a swirled pattern without overmixing.

5. Refrigerate the pie for at least 4 hours or overnight until firm. Slice with a warmed knife for clean edges and serve chilled.

Notes

Make sure the fruit mixtures cool fully before adding them so they do not melt the filling.

Allow enough chilling time so the pie sets properly and slices neatly.

Avoid over-swirling to keep distinct red and blue patterns.

Use softened cream cheese for a smooth texture without lumps.

Store refrigerated up to 3 days or freeze slices for longer storage.

You can substitute the crust with vanilla wafers or shortbread cookies.
