Description
This Almond Cake has a rich nutty flavor and a soft, tender crumb. Made with finely ground almond flour, maple syrup or honey, eggs, and sliced almonds, it is naturally gluten-free and easy to prepare.
Ingredients
2 cups almond flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
4 large eggs, at room temperature
1/2 cup maple syrup or honey
2 teaspoons vanilla extract
1 teaspoon almond extract, optional but recommended
1/4 cup sliced almonds, plus extra for garnish
Powdered sugar for dusting, optional
Instructions
1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan or springform pan. Line the bottom with parchment paper if desired.
2. Whisk the almond flour, baking soda, and kosher salt together in a bowl.
3. In another bowl, whisk the eggs, maple syrup or honey, vanilla extract, and almond extract until smooth.
4. Stir the wet mixture into the dry ingredients just until a uniform batter forms.
5. Transfer the batter to the prepared pan and scatter the sliced almonds over the surface.
6. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool the cake in the pan for 15 minutes.
8. Transfer the cake to a wire rack and let it cool completely.
9. Garnish with extra sliced almonds and powdered sugar if desired.
Notes
Use finely ground, blanched almond flour for a light and tender crumb. Coarse almond meal can create a denser or gritty texture.
Almond flour can brown quickly, so watch the cake closely near the end of baking.
Maple syrup generally gives the cake a lighter texture, while honey makes it somewhat denser.
Honey, date syrup, or liquid erythritol can replace maple syrup.
Granulated sweeteners require changes to the liquid balance of the recipe.
Hazelnut flour can replace almond flour at a 1:1 ratio.
Most other flours cannot replace almond flour directly.
Store the cake in an airtight container in the refrigerator for up to 1 week.
For longer storage, cool the cake completely, wrap it securely, and freeze for up to 3 months.
Suggested toppings include sliced almonds, powdered sugar, whipped cream or coconut whipped cream with berries, lemon or orange glaze, mascarpone or Greek yogurt with honey, toasted almonds, or chopped pistachios.
