Description

Apple Arugula Salad is a fresh Thanksgiving side with crisp apples, peppery baby arugula, creamy goat cheese, dried figs, maple-roasted pecans, and a tangy maple balsamic dressing. It comes together in just 20 minutes and serves 6.


Ingredients

Salad:

3 apples, very thinly sliced

5 oz baby arugula

1/4 cup red onion, thinly sliced

1/2 cup dried figs, chopped

1/2 cup goat cheese crumbles

Maple Pecans:

1 cup pecan halves

2 Tbsp pure maple syrup

Pinch of sea salt

Maple Balsamic Dressing:

1/2 cup extra-virgin olive oil

2 tsp pure maple syrup

1 tsp lemon juice

1 1/2 tsp Dijon mustard

1/2 tsp black pepper

1 garlic clove, minced

3 Tbsp balsamic vinegar

1/4 to 1/2 tsp sea salt, or to taste


Instructions

1. Heat the oven to 350°F.

2. Toss the pecan halves with 2 tablespoons maple syrup and a pinch of sea salt.

3. Spread the pecans on a parchment-lined baking sheet and roast for 5 to 7 minutes, until toasted and slightly darker. Let them cool.

4. Whisk the olive oil, maple syrup, lemon juice, Dijon mustard, black pepper, minced garlic, balsamic vinegar, and sea salt together. Taste and adjust the seasoning as needed.

5. Place the baby arugula in a large salad bowl.

6. Top with the sliced apples, dried figs, red onion, goat cheese, and cooled maple pecans.

7. Immediately before serving, add roughly half of the prepared dressing.

8. Toss gently and serve right away.

Notes

For the best appearance and crunch, assemble the salad within about 1 hour of serving and add the sliced apples shortly before eating.

To slow apple browning, soak the apple slices for about 10 minutes in a mixture of 1 teaspoon salt per cup of water. Then rinse and pat dry.

Fuji, Gala, or Honeycrisp apples work well in this salad.

Baby arugula has a milder flavor than mature arugula.

Store-bought maple-roasted pecans or regular roasted pecans can replace the homemade maple pecans.

Honey can replace maple syrup in the dressing.

Apple cider vinegar can replace balsamic vinegar for a different flavor.

You can add dried cranberries, golden raisins, roasted sweet potato, butternut squash, red grapes, pumpkin seeds, pomegranate arils, avocado, or roasted chickpeas.

Walnuts or almonds can replace the pecans, while feta can replace the goat cheese.

Spinach, spring greens, or other lettuce can replace or mix with the arugula.

Add chicken, steak, or salmon to turn the salad into a fuller meal.

The dressing recipe makes more than you may need. The nutrition information assumes you use half of the prepared dressing.

Store leftovers in an airtight container in the refrigerator for up to about 2 days. The apples may brown, so the salad tastes and looks best on the day you make it.
