Description
A quick, vibrant Apple Carrot Beet Smoothie made with raw beet, carrots, apple, orange, and fresh ginger. It has a thick, fiber-rich texture with a balanced earthy-sweet flavor and makes two servings in 20 minutes.
Ingredients
1 medium red beet, trimmed and cut into 2-inch chunks
1 apple, any variety, cut into 2-inch chunks
3 carrots, ends trimmed and cut into 2-inch chunks
1 orange, juiced
1 2-inch piece fresh ginger, peeled
1 cup cold water
Instructions
1. Add the beet, apple, carrots, orange juice, ginger, and cold water to a high-powered blender.
2. Blend for about 1–2 minutes, until completely smooth, using a tamper if necessary.
3. Pour into glasses and serve immediately, or refrigerate until chilled for later serving.
4. Stir or shake thoroughly before drinking if the smoothie has separated while sitting.
Notes
Place parchment paper over the cutting board before preparing the beet to help prevent staining.
The smoothie naturally separates while sitting, so shake or stir it thoroughly before drinking.
Beets, carrots, and apples do not need peeling if thoroughly washed and scrubbed. Leaving the skins on increases fiber and creates a thicker texture.
Peel the beet, carrots, and apple for a smoother, less fibrous drink.
Ginger is generally best peeled because its skin can be tough.
The beet is used raw.
A yellow beet can replace the red beet for a golden-colored smoothie.
Any apple variety can be used.
Coconut water can replace the cold water.
Optional additions include ground turmeric, cinnamon, maca powder, or bee pollen.
Use fresh, firm fruits and vegetables for the best flavor.
Serve immediately or refrigerate for later.
