8 Granny Smith apples, peeled, cored, and sliced

1/3 cup maple syrup

2 tablespoons arrowroot flour or cornstarch

Oat Crumble Topping:

1 cup almond flour

1/2 cup coconut sugar or another granulated sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon kosher salt

1/2 cup cold unsalted butter, cubed

1 cup old-fashioned rolled oats


Instructions

1. Preheat the oven to 350°F (180°C).

2. Peel, core, and slice the Granny Smith apples.

3. Place the apples in a large bowl. Add the maple syrup, arrowroot flour or cornstarch, fresh lemon juice, vanilla extract, and cinnamon. Toss until the mixture evenly coats the apples.

4. Spread the apple mixture evenly in a 9 x 13-inch baking dish.

5. In another bowl, combine the almond flour, coconut sugar, cinnamon, and kosher salt.

6. Work the cold cubed butter into the dry ingredients with a pastry cutter or fork until the mixture becomes crumbly.

7. Stir the old-fashioned rolled oats into the crumble mixture.

8. Distribute the oat crumble topping evenly over the apples without pressing it down.

9. Bake for 45 to 50 minutes, until the topping turns golden and the apples become tender.

Notes

Tart, firm Granny Smith apples work well because they balance the sweetness and retain their structure during baking.

Cornstarch can replace arrowroot flour.

Regular flour can replace almond flour.

Another granulated sugar can replace coconut sugar.

Quick-cooking oats can replace old-fashioned rolled oats when rolled oats are unavailable.

For a dairy-free version, replace the unsalted butter with vegan butter.

Ghee also works for those who tolerate it.
