Description
Fresh and chunky avocado salsa with Roma tomatoes, red onion, jalapeño, cilantro, and lime. It tastes like a mix of guacamole and pico de gallo, with creamy avocado, bright citrus flavor, and mild heat. Ready in 15 minutes with no cooking.
Ingredients
6 Roma tomatoes, seeded and diced
1/2 red onion, chopped
1 jalapeño, seeded and chopped
4 avocados, peeled, pitted, and diced
Juice of 2 limes
1/2 teaspoon salt
1/2 cup cilantro leaves, chopped
Instructions
1. Dice the tomatoes and avocados. Finely chop the red onion, jalapeño, and cilantro.
2. Add the tomatoes, avocado, onion, jalapeño, and cilantro to a large bowl.
3. Pour in the fresh lime juice and add the salt.
4. Toss everything gently until evenly mixed.
5. Taste and add more salt if needed.
6. Serve immediately with tortilla chips or alongside meat or seafood.
Notes
Use ripe but firm avocados so the salsa stays chunky instead of turning mushy.
Parsley can replace cilantro, although the flavor will change.
Fresh jalapeño gives the best fresh flavor, but jarred pickled jalapeño also works.
Serve the salsa soon after preparation because avocado browns over time. Lime juice helps slow the browning.
For storage, place the salsa in a tightly fitting airtight container with as little air space as possible.
For mango avocado salsa, replace some of the avocado and tomato with chopped mango.
For pineapple avocado salsa, add chopped pineapple.
For avocado shrimp salsa, mix in about 1 pound of cooked, cooled, chopped shrimp.
