Description
A quick and elegant baked burrata recipe with creamy burrata, roasted cherry tomatoes, garlic, oregano, fresh basil, and balsamic glaze. Serve with crostini or vegetables for an easy lunch, appetizer, dip, or party dish.
Ingredients
2 cups cherry tomatoes, halved
3 tablespoons extra virgin olive oil
3 garlic cloves, sliced
1/4 teaspoon sea salt
1 tablespoon fresh oregano or 1 teaspoon dried oregano
8 ounces burrata or fresh mozzarella
2 tablespoons fresh basil, sliced
1/8 cup balsamic glaze
Crostini or sliced vegetables for serving
Instructions
1. Preheat the oven to 350°F (175°C).
2. Combine the tomatoes, olive oil, garlic, oregano, and salt in a small baking dish.
3. Roast for about 25 minutes until the tomatoes soften and release their juices.
4. Place the burrata or mozzarella in the center of a serving dish.
5. Spoon the roasted tomato mixture around and slightly over the cheese.
6. Finish with fresh basil and a drizzle of balsamic glaze.
7. Serve immediately with crostini or vegetables for dipping.
Notes
Fresh burrata provides the creamiest texture, but fresh mozzarella can be used as a substitute.
Halving the tomatoes helps them release more juices and flavor while roasting.
Spooning some of the warm tomato mixture over the cheese helps soften it and create a creamy consistency.
For a lower-carb option, serve with celery, peppers, carrots, or other crunchy vegetables instead of bread.
Shortcuts include using bottled minced garlic, dried oregano, or canned diced or crushed tomatoes.
The roasted tomato mixture can be prepared up to 2 weeks ahead and stored refrigerated in an airtight container. Reheat before serving.
