Description
Tender baked cod topped with a silky orange beurre blanc sauce with fresh citrus flavor. This elegant lunch serves four and comes together in just 30 minutes.
Ingredients
Baked Cod:
4 cod fillets (6 oz each)
1 tbsp extra-virgin olive oil
Kosher salt, to taste
Ground black pepper, to taste
Orange Beurre Blanc Sauce:
1 cup cold unsalted butter, cut into 1-tbsp pieces
1/4 cup finely chopped shallots
1/4 cup dry white wine
2 tbsp white wine vinegar
2 tbsp fresh orange juice
1/3 cup heavy cream
Kosher salt, to taste
1 tsp finely grated orange zest
Instructions
1. Preheat the oven to 400°F (200°C).
2. Place the cod fillets in a baking dish. Coat both sides with olive oil, then season with kosher salt and ground black pepper.
3. Bake for 14 to 15 minutes, until the cod looks opaque and flakes easily with a fork. Check for an internal temperature of 145°F (63°C), if desired.
4. Meanwhile, melt 1 tablespoon of the butter over medium heat.
5. Add the shallots and whisk for about 30 seconds.
6. Add the dry white wine, white wine vinegar, and fresh orange juice. Whisk while the mixture reduces until roughly 2 tablespoons of liquid remain.
7. Stir in the heavy cream and kosher salt, then bring the mixture to a boil.
8. Reduce the heat to medium-low and add the orange zest.
9. Gradually whisk in the remaining cold butter a few pieces at a time. Whisk continuously until the sauce becomes smooth and silky.
10. Plate the baked cod, spoon the orange beurre blanc over each fillet, and serve immediately.
Notes
Prepare the orange beurre blanc immediately before serving for the best consistency and flavor.
If you hold the sauce warm for an extended period, whisk it continuously to help maintain its texture.
Refrigerating and reheating the beurre blanc can cause the emulsion to separate.
You can use frozen cod if you thaw it completely and pat it thoroughly dry before cooking.
Halibut, mahi mahi, or another flaky white fish can replace the cod.
Serve with a leafy salad, mashed potatoes, mashed cauliflower, risotto, roasted asparagus, roasted broccoli, or sautéed green beans.
Store leftover cod in an airtight container in the refrigerator for 2 to 3 days.
For longer storage, wrap the cod tightly in plastic and foil or place it in a freezer-safe bag. Freeze for up to 3 months.
Reheat leftover cod gently in a low-temperature oven, in a skillet over low heat, or in the microwave in 20-second intervals.
