This Baked Parmesan Zucchini Recipe is a quick and healthy side dish with tender zucchini, crispy Parmesan, and savory herbs. Ready in just 30 minutes, it pairs perfectly with your favorite main dishes or dipping sauces.


Ingredients

4 medium zucchini, quartered lengthwise and patted dry

1/2 cup freshly grated Parmesan cheese

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

Kosher salt, to taste

Freshly ground black pepper, to taste

2 tablespoons olive oil

2 tablespoons chopped fresh parsley, optional for garnish


Instructions

1. Preheat the oven to 400°F (200°C). Lightly coat a wire rack with nonstick spray and place it over a baking sheet.

2. Mix the Parmesan cheese, thyme, oregano, basil, garlic powder, salt, and pepper in a small bowl.

3. Arrange the zucchini spears in a single layer on the prepared wire rack.

4. Drizzle the zucchini with olive oil and coat evenly with the Parmesan herb mixture.

5. Bake for 10 to 15 minutes, turning the zucchini halfway through cooking.

6. Broil for 2 to 3 minutes until the Parmesan becomes crisp and golden brown.

7. Garnish with chopped parsley if desired and serve immediately while hot.

Notes

Pat the zucchini completely dry before baking to help it crisp.

Cut all zucchini pieces into similar sizes for even cooking.
