Description
Baked Salmon with Avocado & Feta is a quick Mediterranean inspired dinner with tender flaky salmon, creamy avocado, salty feta, fresh herbs, and bright lemon flavor.
Ingredients
4 salmon fillets, skinless
2 tbsp olive oil
2 tbsp lemon juice
1 tsp lemon zest
1 tsp fresh dill, chopped
Salt, to taste
Black pepper, to taste
Paprika, to taste
1 large avocado, diced
1/3 cup feta cheese, crumbled
1 tbsp fresh dill, chopped
1 tbsp fresh chives, sliced
Juice from 1/2 lemon
Salt and black pepper, to taste
Instructions
1. Preheat oven to 400°F and lightly grease a baking dish.
2. Combine avocado, feta, dill, chives, lemon juice, salt, and pepper in a bowl. Chill until ready to serve.
3. Pat salmon dry and place in the baking dish.
4. Whisk olive oil, lemon juice, lemon zest, and dill together, then brush over the salmon fillets.
5. Season salmon with salt, pepper, and paprika.
6. Bake for 10 to 12 minutes, or until the salmon flakes easily with a fork.
7. Serve hot with the avocado feta mixture spooned on top.
Notes
Extra topping can be prepared if serving with side dishes.
Block feta cheese is recommended for better flavor and texture.
Ripe or slightly overripe avocados work best for a creamy topping.
Skin on or skinless salmon fillets can be used.
Adjust seasoning and lemon juice to taste before serving.
Salmon should be baked until flaky but still moist.
