Description
Fresh BBQ Chicken Salad with smoky chicken, crisp romaine, sweet corn, black beans, creamy avocado, cheddar cheese, crunchy tortilla strips, and BBQ ranch dressing.
Ingredients
4 cups chopped romaine lettuce
1 to 1½ cups cooked chicken, shredded or chopped
⅓ to ½ cup barbecue sauce
1 cup corn kernels
1 cup black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 avocado, diced
¼ cup red onion, diced
1 cup shredded cheddar or Monterey Jack cheese
Corn chips or tortilla strips for topping
½ cup ranch dressing
2 to 3 tablespoons barbecue sauce for dressing
Instructions
1. Coat the cooked chicken with barbecue sauce and warm slightly if desired.
2. In a large bowl or individual serving bowls, layer the lettuce, corn, black beans, tomatoes, avocado, onion, cheese, and BBQ chicken.
3. Mix ranch dressing with barbecue sauce until smooth.
4. Drizzle the BBQ ranch dressing over the salad.
5. Finish with corn chips or tortilla strips right before serving.
Notes
Use rotisserie chicken, grilled chicken, or leftover chicken for convenience.
Add the avocado just before serving to keep it fresh.
Adjust the dressing with more or less barbecue sauce depending on desired sweetness and smokiness.
Tortilla strips add crunch but can be omitted for a lighter salad.
Best served fresh and chilled.
Store salad ingredients separately from dressing and crunchy toppings for best texture.
Customize with jalapeños, cilantro, bell peppers, or different cheeses.
