Description
A fresh spring and summer Berry Spinach Salad made with baby spinach, mixed berries, creamy goat cheese, red onion, crunchy pecans, and raspberry vinaigrette. It comes together in just 5 minutes for a colorful lunch or light side dish.
Ingredients
6 cups baby spinach
1 cup strawberries, halved
1/2 cup raspberries
1/2 cup blueberries
1/3 cup goat cheese, crumbled
1/3 cup red onion, thinly sliced
1/4 cup pecans, roughly chopped
1/2 recipe raspberry vinaigrette
Freshly ground black pepper, optional
Instructions
1. Add the baby spinach, strawberries, raspberries, blueberries, red onion, goat cheese, and pecans to a large bowl.
2. Gently mix the ingredients together so the berries stay whole.
3. Pour the raspberry vinaigrette over the salad.
4. Toss gently until the ingredients have an even coating of dressing.
5. Add freshly ground black pepper if desired.
6. Serve immediately.
Notes
For the freshest texture, serve the salad immediately after adding the dressing.
If preparing ahead, keep the salad ingredients and raspberry vinaigrette separate. Combine them just before serving.
Stored separately, the prepared ingredients stay fresh in the refrigerator for up to 3 days.
Toasted or candied pecans both add great crunch.
Use any combination of fresh berries based on preference or availability.
For a more filling lunch, add grilled chicken, grilled salmon, or pulled pork.
You can replace goat cheese with feta.
You can also add a light drizzle of balsamic glaze.
