Description

The BEST Cowboy Caviar Ever is a fresh, colorful mix of beans, corn, crisp peppers, red onion, cilantro, and a sweet tangy dressing. Serve it chilled or at room temperature as a dip, salad, side dish, or topping for tacos, burritos, quesadillas, toast, or grain bowls.


Ingredients

15.5 oz black beans, drained, rinsed, and dried

15.5 oz black-eyed peas, drained, rinsed, and dried

15 oz sweet corn, drained, rinsed, and dried

1 cup chopped cilantro

1/2 cup chopped red bell pepper

1/2 cup chopped orange bell pepper

1/2 cup diced red onion

1 tsp chili powder

1/2 tsp kosher salt

1/4 cup sugar

1/2 cup olive oil

1/3 cup white wine vinegar

1 tbsp fresh lime juice

1/4 tsp garlic powder


Instructions

1. Drain, rinse, and thoroughly dry the black beans, black-eyed peas, and sweet corn.

2. Place the beans and corn in a large mixing bowl.

3. Add the chopped cilantro, red bell pepper, orange bell pepper, and diced red onion.

4. Add the chili powder, kosher salt, sugar, olive oil, white wine vinegar, lime juice, and garlic powder.

5. Stir until everything is evenly coated and combined.

6. Serve chilled or at room temperature.

Notes

Dry the beans and corn well after rinsing to avoid excess liquid.

This recipe can be prepared ahead of time, and the flavor improves as it rests.

If refrigerated overnight, let it sit at room temperature for about 1 hour before serving, or warm slightly to loosen the dressing.

For more heat, add about 1/2 tsp cayenne pepper.

White wine vinegar can be replaced with another vinaigrette, including balsamic or raspberry vinaigrette.

Serve as a dip with tortilla chips, as a salad, or as a topping for tacos, burritos, quesadillas, toast, or grain bowls.

Avocado may be added, but mix it in just before serving.
