2 (14-ounce) cans fire-roasted diced tomatoes, drained

1 (4-ounce) can green chilies, undrained

1/2 cup fresh cilantro, about 1/2 bunch

Juice of 1/2 lime, about 2 tablespoons

1/2 teaspoon kosher salt


Instructions

1. Process the onion, garlic, and jalapeño first in a food processor until finely chopped.

2. Add the drained fire-roasted tomatoes, undrained green chilies, cilantro, lime juice, and kosher salt.

3. Pulse in short, roughly 1-second bursts until the salsa looks blended but still slightly chunky.

4. Taste the salsa and add more salt or lime juice as needed.

Notes

A food processor creates a smooth yet slightly chunky restaurant-style consistency. You can also use a blender, but pulse briefly and scrape down the sides as needed.

For more heat, keep some jalapeño seeds or substitute a serrano pepper. For less heat, remove all the seeds or use only half a jalapeño.

Regular canned tomatoes can replace fire-roasted tomatoes, although fire-roasted tomatoes add more smoky flavor.

If you use fresh tomatoes, roast them first for deeper flavor and a similar texture.
