Ingredients
½ pound boneless, skinless chicken breasts
6 cups spring mix lettuce
1 cup fresh blackberries
1 medium avocado, sliced
¼ cup red onion, sliced
¼ cup chopped walnuts
½ cup fresh blackberries
2 teaspoons Dijon mustard
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
2 tablespoons honey
1 teaspoon soy sauce
Salt and pepper, to taste
Instructions
1. Cook the chicken in a skillet over medium high heat until fully cooked.
2. Cover the chicken loosely with foil and let it rest.
3. Place the spring mix in a large serving bowl.
4. Top with blackberries, avocado, red onion, and walnuts.
5. In a separate bowl, combine the blackberries, Dijon mustard, balsamic vinegar, olive oil, honey, and soy sauce.
6. Mash the berries with a fork to release their juices.
7. Whisk the dressing until blended.
8. Season with salt and pepper.
