Description

Blackberry Chicken Salad combines tender chicken, fresh blackberries, creamy avocado, crunchy walnuts, and a sweet savory blackberry balsamic dressing.

Ingredients

Scale

½ pound boneless, skinless chicken breasts

6 cups spring mix lettuce

1 cup fresh blackberries

1 medium avocado, sliced

¼ cup red onion, sliced

¼ cup chopped walnuts

½ cup fresh blackberries

2 teaspoons Dijon mustard

2 tablespoons balsamic vinegar

2 tablespoons extra virgin olive oil

2 tablespoons honey

1 teaspoon soy sauce

Salt and pepper, to taste

Instructions

1. Cook the chicken in a skillet over medium high heat until fully cooked.

2. Cover the chicken loosely with foil and let it rest.

3. Place the spring mix in a large serving bowl.

4. Top with blackberries, avocado, red onion, and walnuts.

5. In a separate bowl, combine the blackberries, Dijon mustard, balsamic vinegar, olive oil, honey, and soy sauce.

6. Mash the berries with a fork to release their juices.

7. Whisk the dressing until blended.

8. Season with salt and pepper.

9. Slice the rested chicken and arrange it over the salad.

10. Drizzle with the dressing and serve immediately.

Notes

Mash the blackberries well when making the dressing to create a flavorful, lightly textured vinaigrette.

Serve the salad immediately after dressing for the best texture and freshness.
