Description
Smooth, thick Blueberry Butter made in the slow cooker with fresh blueberries, brown sugar, honey, lemon, cinnamon, and nutmeg.
Ingredients
3 pounds fresh blueberries
1½ cups light brown sugar
1 tablespoon honey
Zest and juice of 1 lemon
1 teaspoon cinnamon
¼ teaspoon nutmeg
Instructions
1. Combine the blueberries, brown sugar, honey, lemon zest, lemon juice, cinnamon, and nutmeg in a slow cooker and stir well.
2. Cover and cook on high for 1 hour.
3. Blend the mixture until completely smooth, then return it to the slow cooker.
4. Leave the lid slightly open to allow moisture to escape.
5. Cook on low for 4 to 5 more hours, until thickened.
6. Transfer to jars, cool, and refrigerate.
Notes
Blend thoroughly for a smooth, spreadable texture.
Keeping the lid slightly ajar during the second cooking stage helps excess liquid evaporate and creates a thicker fruit butter.
Store refrigerated in sealed glass jars for up to 2 months.
