Description

A festive no-cook Blueberry Cherry Tomato Caprese Salad with sweet blueberries, juicy tomatoes, creamy mozzarella, fresh basil, olive oil, and balsamic vinegar.


Ingredients

Scale

1 pint blueberries

2 pints cherry tomatoes

Fresh basil, to taste

Balsamic vinegar, to taste

Olive oil, to taste

Salt and pepper, to taste

Firm buffalo mozzarella cheese, sliced


Instructions

1. Rinse the blueberries and cherry tomatoes thoroughly, then let them drain well.

2. Cut the cherry tomatoes in halves and place them in a serving bowl with the blueberries.

3. Slice the mozzarella into thin rounds, then use a small cutter to shape them if desired.

4. Add the mozzarella on top of the blueberry and tomato mixture.

5. Tear fresh basil leaves over everything.

6. Drizzle with olive oil and balsamic vinegar.

7. Season with salt and pepper to taste.

8. Serve right away for the best freshness.

Notes

To create decorative shapes, slice mozzarella into about 1/4 inch thick pieces and press a small cutter into each slice.

This adds visual appeal but requires extra time.

Best served immediately after assembling.

Grape tomatoes can replace cherry tomatoes.
