Ingredients
2.5 fresh peaches
4 small English cucumbers
3/4 cup fresh blueberries
4 oz goat cheese log, crumbled
8 to 10 basil leaves
1 tbsp diced jalapeño
1/4 cup diced red onion
1 tbsp hot honey
Juice of 1 lime
Sea salt, to taste
Instructions
1. Wash and thoroughly dry all produce.
2. Dice the cucumbers, peaches, jalapeño, and red onion into small pieces.
3. Slice the basil into thin strips.
4. Combine the cucumbers, peaches, blueberries, jalapeño, and red onion in a large bowl.
5. Add the crumbled goat cheese, lime juice, and hot honey.
6. Gently toss everything together.
7. Finish with basil and sea salt before serving.
Notes
Store the salad in an airtight container for up to 3 days.
Cucumbers may release liquid over time, so stir again before eating.
For better texture, keep the goat cheese separate until serving if making ahead.
Chop the onion and jalapeño very finely to avoid overpowering bites.
Regular honey can replace hot honey.
Add extra jalapeño or red pepper flakes for more heat.
Feta or blue cheese also work as substitutes for goat cheese.
Optional greens such as arugula, spinach, or butter lettuce can be added for a larger salad.
Serve with grilled chicken, salmon, burgers, tofu, or shrimp.
