Description

Ingredients

For the filling:

2 cups blueberries

2 1/2 cups peeled and sliced peaches, about 5 to 6 peaches

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1/4 teaspoon vanilla extract

1/2 cup granulated sugar

1/4 cup all purpose flour

For the crumble topping:

1/2 cup all purpose flour

1/2 cup old fashioned oats

1/3 cup brown sugar

1/4 cup granulated sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

6 tablespoons cold butter, diced


Instructions

1. Preheat oven to 350°F.

2. Combine blueberries, peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and flour in a large bowl until evenly coated.

3. Let the fruit rest while you prepare the topping.

4. In another bowl, mix flour, oats, brown sugar, granulated sugar, salt, and cinnamon.

5. Work in the cold diced butter with your fingers until crumbly clusters form.

6. Transfer the fruit mixture to a 2 quart baking dish or large cast iron skillet.

7. Scatter the crumble topping evenly over the fruit.

8. Place the dish on a baking sheet.

9. Bake for 40 to 45 minutes, until the topping looks golden and the fruit bubbles around the edges.

10. Cool slightly, then serve warm or at room temperature with vanilla ice cream if desired.

Notes

The crumble can be baked in individual ramekins instead of one dish.

The topping may be prepared up to 2 days ahead and refrigerated in an airtight container.

Leftover baked crumble keeps refrigerated for up to 3 days.

Frozen peaches and blueberries can be used in the same quantities as fresh fruit.

Best made with ripe, sweet summer peaches and fresh blueberries.

Serve with vanilla ice cream, whipped cream, or yogurt.
