Description
Blueberry Vanilla Applesauce is a naturally sweet, vibrant fruit sauce made with apples, wild blueberries, vanilla, and lemon. Enjoy it chunky or smooth as a snack, breakfast topping, dessert sauce, or homemade fruit sauce.
Ingredients
4 lb apples, peeled, cored, quartered, and diced
3 cups frozen wild blueberries
1/4 cup coconut sugar
1/4 cup water
1 lemon, zested and juiced, about 2 tbsp juice
1 tsp vanilla
1/4 tsp pink Himalayan sea salt
Instructions
1. Peel, core, quarter, and dice the apples, then rinse well under cold water.
2. Combine the apples, blueberries, coconut sugar, water, lemon zest, lemon juice, vanilla, and salt in a large 6-quart pot or Dutch oven.
3. Bring to a gentle boil over medium-high heat. Cover, reduce the heat, and simmer for 20 to 25 minutes, stirring occasionally, until the apples are very soft.
4. Remove the lemon peel pieces. Blend the mixture to the desired consistency using an immersion blender. For a thinner texture, add water a teaspoon at a time. If too thin, simmer uncovered until thickened.
5. Transfer to jars or containers. Cool before refrigerating, freezing, or canning.
Notes
Makes 16 servings.
One serving equals approximately 4 ounces.
For chunky applesauce, blend only briefly, leaving some texture.
For very smooth applesauce, continue blending until silky. Add small amounts of water only if needed.
Wild blueberries provide stronger flavor, sweeter taste, deeper color, and blend smoothly into the sauce.
The lemon peel contributes pectin, helping the applesauce thicken after cooling.
The coconut sugar is optional for sweetness, but vanilla is important for flavor.
Very sweet apples can be used to make the recipe without added sweetener.
Keeps in the refrigerator for up to 2 weeks, in the freezer for up to 3 months, and when properly water-bath canned for at least 1 year.
