Description

Bow Tie Pasta Salad is a light, fresh, and colorful pasta dish made with farfalle pasta, cherry tomatoes, mozzarella, spinach, and basil tossed in a bright pesto lemon dressing. This quick 25 minute recipe works perfectly for dinners, BBQs, potlucks, and summer gatherings.


Ingredients

12 ounces (about 4 cups) dry bow tie pasta (farfalle)

2 cups cherry tomatoes, halved

1/4 cup red onion, diced

1 cup bocconcini cheese (small mozzarella balls), halved

1 cup fresh spinach, packed and finely chopped

1/2 cup fresh basil, finely chopped

3 tablespoons basil pesto

2 tablespoons olive oil

Juice of 1/2 lemon

Salt to taste

Black pepper to taste


Instructions

1. Bring a large pot of salted water to a boil and cook the bow tie pasta according to package instructions until slightly past al dente, about 11 to 13 minutes.

2. Drain the pasta and briefly rinse with cold water to stop the cooking process and cool it quickly.

3. Toss the cooled pasta with a small amount of olive oil and allow it to reach room temperature.

4. In a small bowl or jar, whisk together the basil pesto, olive oil, and lemon juice until well combined.

5. In a large mixing bowl add the cooled pasta, cherry tomatoes, diced red onion, bocconcini cheese, chopped spinach, and fresh basil.

6. Pour the pesto lemon dressing over the pasta mixture.

7. Season with salt and black pepper and toss gently until evenly coated.

8. Taste and adjust seasoning or pesto if needed.

9. Serve immediately or refrigerate until ready to serve.

Notes

Bow tie pasta, also called farfalle, works well for pasta salads because its shape holds dressing and mixes easily with chopped vegetables.

Arugula can be used instead of spinach for a slightly peppery flavor.

Grape tomatoes or chopped whole tomatoes can replace cherry tomatoes.

Bocconcini can be substituted with cubed mozzarella, feta, or parmesan cheese.

For extra vegetables add cucumber, bell peppers, zucchini, carrots, olives, or green onions.

For gluten free preparation use gluten free bow tie pasta.

For dairy free preparation omit cheese and use dairy free pesto.

If making ahead refresh the salad with a little olive oil or lemon juice before serving.
