- For the Dough:
- 1 cup whole milk
- 4 tablespoons unsalted butter, very soft
- 3 1/2 cups all-purpose flour, divided
- 1 package (0.25 oz) rapid-rise yeast
- 3 tablespoons granulated sugar
- 3/4 teaspoon salt
- 1 large egg, room temperature
- For the Brown Sugar Cinnamon Filling:
- 1 cup light brown sugar
- 1 tablespoon ground cinnamon
- 3/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup butter, very soft
- For the Butter Pecan Topping:
- 1/2 cup unsalted butter
- 3/4 cup packed dark brown sugar
- 1/4 teaspoon ground cinnamon
- 1/3 cup heavy cream
- 1/4 teaspoon salt
- 1 1/2 cups pecan halves
- 1/2 cup roughly chopped pecans
- 2 teaspoons vanilla extract
Instructions
- Coat a 9 × 13-inch baking dish with nonstick baking spray.
- Bring the whole milk just to a boil in a small saucepan. Remove from heat, stir in 4 tablespoons of butter until melted, and allow the mixture to cool to 115–120°F (46–49°C).
- In the bowl of a stand mixer, combine 2 1/2 cups all-purpose flour, rapid-rise yeast, granulated sugar, and salt. Add the egg, then gradually mix in the warm milk and butter mixture.
- Attach the dough hook and mix on low speed. Gradually add the remaining flour in 1/4-cup portions. Increase to medium speed and knead for 5 minutes.
- Transfer the dough to a lightly floured surface. Knead briefly until smooth, form into a ball, and return to the mixing bowl. Cover tightly and allow to rise for approximately 60 minutes or until doubled in size.
- Prepare the filling by mixing light brown sugar, cinnamon, ginger, nutmeg, cloves, and 1/2 cup very soft butter until a thick, spreadable paste forms.
- Roll the risen dough into a rectangle approximately 16 × 9 inches. Spread the cinnamon filling over the middle, leaving a roughly 3-inch uncovered border along the top and sides.
- Roll the dough firmly into a log and seal the seam. Using a serrated knife or unflavored dental floss, cut the log into 12 equal cinnamon buns.
- Arrange the buns cut-side up in the prepared baking dish. Cover and allow them to rise for another 30 minutes. Meanwhile, preheat the oven to 350°F (175°C).
- Bake the cinnamon buns for 18–20 minutes until the tops and edges turn lightly golden. Remove from the oven and allow them to cool slightly.
- Prepare the butter pecan topping by melting 1/2 cup unsalted butter in a saucepan over medium heat. Add the dark brown sugar and stir for approximately 2 minutes until the mixture dissolves and bubbles.
- Stir in the ground cinnamon, heavy cream, and salt. Add the pecan halves and chopped pecans. Stir gently until the buttery brown sugar mixture coats all the nuts.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Spoon the warm butter pecan topping evenly over the freshly baked cinnamon buns. Serve slightly warm and enjoy.
