Description

This easy Cabbage Soup is a cozy one-pot meal made with tender cabbage, fresh vegetables, diced tomatoes, herbs, and a bright touch of lemon. It is vegetarian, low-carb, and ready in just 30 minutes.


Ingredients

2 tablespoons olive oil

1 onion, diced

1 large carrot, diced

2 celery stalks, diced

2 garlic cloves, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon salt

1/2 green cabbage, chopped, roughly 6 to 8 cups

1 (14-ounce) can diced tomatoes

4 to 6 cups vegetable broth, depending on desired consistency

1 to 2 tablespoons lemon juice

1/4 cup fresh parsley, roughly chopped

Cracked black pepper, to taste


Instructions

1. Heat the olive oil in a large pot over medium-high heat. Add the onion, carrot, and celery and cook for 4 to 5 minutes until they begin to soften.

2. Stir in the garlic, oregano, basil, and salt and cook for about 1 minute until aromatic.

3. Add the chopped cabbage and cook for 5 minutes, stirring frequently, until it starts to soften.

4. Pour in the vegetable broth and diced tomatoes. Simmer uncovered for about 10 minutes, or until the vegetables reach the desired tenderness.

5. Remove from the heat. Stir in the lemon juice, parsley, and black pepper, then serve.

Notes

Use 4 cups of broth for a thicker soup or up to 6 cups for a brothier consistency.

Chicken broth can replace vegetable broth.

Napa cabbage can replace green cabbage, although it will wilt more.

Fire-roasted diced tomatoes can replace regular tomatoes for a smokier flavor.

For extra protein, add shredded or diced chicken, pulled pork, carnitas, ground chicken, ground beef, white beans, chickpeas, or lentils.

If adding lentils, add additional broth as needed.

Extra vegetables can include bell peppers, zucchini, kale, or spinach.

Potatoes or cooked rice make the soup heartier.

Tomato paste can thicken the broth.

Cayenne or red pepper flakes add heat.

Fresh rosemary or thyme can add extra herbal flavor.

Cool leftovers before transferring them to an airtight container.

Refrigerate leftovers for 4 to 5 days or freeze for up to 3 months.

To reheat frozen soup, thaw overnight in the refrigerator and warm it on the stovetop.

You can also microwave one serving for about 2 minutes until heated through.

Frozen soup can also be microwaved directly until thoroughly hot.
