Smoked sausage such as andouille

Shrimp (shell-on or peeled)

Crab legs

Optional crawfish or lobster

Butter

Garlic for sauce

Paprika or cayenne

Optional parsley or lemon juice

Instructions

1. Fill a large pot with water and bring to a boil. Add Cajun seasoning, Old Bay, onion, garlic, and lemon. Let it simmer to build flavor.

2. Add potatoes and cook until they begin to soften.

3. Add sausage and continue cooking until partially cooked.

4. Add corn and crab legs. Cook for a few minutes until heated through.

5. Add shrimp and any quick-cooking seafood. Cook just until shrimp turn opaque.

6. Drain the mixture and reserve a small amount of broth if needed.

7. In a separate pan, melt butter and cook garlic until fragrant.

8. Stir in paprika or cayenne and a splash of broth if desired.

9. Pour the garlic butter sauce over the seafood or serve on the side.

10. Serve hot, spread out on a tray or table for sharing.

Notes

Do not overcook seafood to avoid a rubbery texture.

Add ingredients in stages based on cooking time.

Shell-on shrimp add more flavor, but peeled shrimp are easier to eat.

Discard any shellfish that do not open after cooking.

Adjust spice level by increasing or reducing Cajun seasoning or hot sauce.

Store leftovers in the refrigerator for up to 2 to 3 days.

Reheat gently to avoid overcooking.
