Description
Smooth and velvety Carrot Ginger Soup made with naturally sweet carrots, fresh ginger, garlic, and warming cinnamon. This easy stovetop soup uses simple ingredients and can be fully vegan and vegetarian when made with vegetable broth.
Ingredients
2 tbsp avocado oil or olive oil
1 medium onion, diced
3 garlic cloves, minced
3 tbsp fresh ginger, minced or finely diced
2 lb carrots, peeled and chopped
4 cups vegetable broth
1 bay leaf
1 tsp ground cinnamon
1 tsp salt
Optional toppings: coconut cream, crispy shallots, toasted pine nuts, chopped cilantro
Instructions
1. Heat the oil in a large pot over medium-high heat. Cook the onion for 1–2 minutes until translucent.
2. Add the ginger and garlic and cook, stirring, for about 1 minute.
3. Stir in the carrots and cook for 10 minutes, stirring regularly.
4. Pour in the broth and add the bay leaf, cinnamon, and salt. Bring to a boil, cover, reduce the heat, and gently simmer for 20–30 minutes, until the carrots are fork-tender.
5. Remove the bay leaf and take the pot off the heat. Purée with an immersion blender, or carefully blend in a high-powered blender, until completely smooth.
6. Divide among bowls and, if desired, finish each serving with about 1 tbsp coconut cream plus crispy shallots, toasted pine nuts, and cilantro.
Notes
Vegetable broth keeps the soup vegetarian and vegan; chicken broth can be substituted when this is not required.

Store refrigerated in an airtight container for 4–5 days.
