Description
Creamy Cherry Creamsicles made with sweet cherries, vanilla whipped cream, and honey. A naturally sweet frozen dessert with a pretty marbled swirl.
Ingredients
10 oz pitted fresh cherries or thawed frozen cherries
1/4 cup coconut water or filtered water
1 cup raw cream or organic whipping cream
1 tsp vanilla extract
3 to 4 tbsp raw honey
Instructions
1. Chill a large mixing bowl beforehand.
2. If using frozen cherries, thaw them first.
3. Blend cherries with coconut water or filtered water until completely smooth.
4. In the chilled bowl, whip the cream with vanilla and honey until thick, fluffy, and whipped cream like.
5. Fill popsicle molds by alternating spoonfuls of whipped cream and cherry puree.
6. Tap molds occasionally so the layers settle and create a marbled effect.
7. Continue until molds are full.
8. Freeze for 6 to 8 hours or overnight.
9. To unmold, briefly run warm water over the outside of the molds until the popsicles release easily.
Notes
For a dairy free version, replace the cream with coconut cream collected from chilled full fat coconut milk.
Refrigerate 1 to 3 cans overnight, scoop off the thick cream layer, then whip it with vanilla and honey until fluffy before assembling the popsicles.
Save any remaining coconut liquid for smoothies or other recipes.
If popsicle molds are unavailable, use paper cups and popsicle sticks instead.
Best frozen overnight for a firm texture.
