Description
A fresh and filling Chicken Cobb Salad with grilled chicken, crisp greens, bacon, avocado, eggs, tomatoes, cucumber, red onion, blue cheese, and ranch dressing.
Ingredients
5 cups mixed greens
3 grilled chicken breasts, sliced
1 cup diced tomatoes
1/2 cup diced cucumber
1/2 cup crumbled bacon
1/2 cup crumbled blue cheese
1 large avocado, diced
4 hard-boiled eggs, peeled and diced
1/2 cup diced red onion
Homemade ranch dressing or preferred dressing
Instructions
1. Divide the mixed greens into 4 serving bowls.
2. Arrange the grilled chicken, tomatoes, cucumber, bacon, blue cheese, avocado, eggs, and red onion over the greens.
3. Drizzle with ranch dressing or another dressing of choice just before serving.
4. Serve immediately for the freshest texture.
Notes
Cook and slice the chicken ahead of time for quicker assembly.
Hard-boiled eggs can be prepared in advance for meal prep.
For a vegetarian version, leave out the chicken and bacon and add extra eggs.
If blue cheese is too strong, feta, mozzarella, or pearl mozzarella can be substituted.
Any lettuce variety works well, including romaine, spinach, Bibb lettuce, or spring mix.
Extra crunch can be added with croutons or nuts.
If red onion tastes too sharp, soak it in cold water for about 15 minutes before using.
Best served immediately after adding dressing.
Store salad ingredients separately from dressing to keep greens fresh.
